game 4

Saturday September 15 was another game day.

Dallin's game had some good things happening.

Parker's seemed to fall apart...but Parker had some great practices and had a good game.

The scores don't show it at all but the boys work hard and I am very grateful for coaches who give so much time to teaching our boys this sport they like & love!

that's got some burn!

Occasionally I find a new recipe to try that is immensely satisfying.

I found one such recipe at Macey's meat counter as I happened to be walking by.

It was last night's dinner and is from Pork: Be Inspired.

(Our results:  Paul & I thought it absolutely delicious.

He didn't leave any leftovers.

The kids ate a lot more than I thought they would but certainly didn't devour it as their favorite!

No one noticed the greek yogurt switch and Parker enjoyed the slaw with lots of added lime to mask the cilantro taste.

Parker's first response was:  "that's got some burn!"

Dallin & Kyralyn echoed this by commenting on its spice).

  

Pulled Pork Tostadas with Slaw & Chipotle Cream

 Chili Rub Slow Cooker Pulled Pork

3lb (ish) pork roast (I think mine was a shoulder roast, could also use a sirloin roast)

2 T chili powder

1 ½ tsp salt

½ tsp cayenne powder

1 T canola oil

½ C chicken broth

I just mixed all the ingredients together, forked holes all over the roast & poured the seasoning/broth mix over the roast in the slow cooker.

Slow Cook it…low or high…till you’re ready to use it & it pulls apart easily

I shredded mine about an hour before we ate it, just left it in the cooker on warm until serving time.

The rest:

4 limes

2 T canola oil

8 c shredded cabbage or a bag of slaw mix

¾ C coarsely chopped fresh cilantro

¼ red onion, finely sliced

1 C sour cream (I used plain Greek yogurt)

½ can chipotle peppers in adobo sauce, seeded and finely minced

Tostadas (flat, crisped corn tortillas)

Garnish:  2 tomatoes, more limes and radishes

Directions:

Halve and squeeze 2 limes.  Mix the juice with the oil for a dressing.  Toss this dressing with the slaw, chopped cilantro and red onion.

Mix cream or yogurt with the chipotle pepper.

Serve:  Tostada, pork, slaw, cream

And Enjoy.

(I liked putting the extra lime on top with tomatoes & radishes)

(oh yeah, and the corn tortillas…I cooked some in oil to crisp them up…didn’t work so well.  If you can do that and get them really crispy I’d like to know how, otherwise, if you want a “crispy” bottom maybe buy the premade tostadas.)

while football does take up a lot of our after-school and Saturday time, it does not suck it all up!??!

usually I don't get to watch these two on the same day anymore, but today we got to play with both of them for a short amount of time.  Emily is 2 and Tate will be 2 in Nov.  When Dallin gets home from school he likes to turn on some music while he eats.  They've just sat down from dancing around the kitchen to Tim McGraw's "Truck, Yeah".  

(oh yeah, Tim...my kids are enjoying country music these days...yes!)

a beautiful site for us as we wait for Parker after practice

(yes we wait for Dallin too, but it's usually very dark by then & I'm so ready to get home that I don't think to pull out the camera.  I should though, Kyralyn likes to play on the playground while we wait & is getting very good at the monkey bars.) 9/7/12 

I enjoy sharing some of my days with Tate now that my own kids are all in school.  This particular morning he wanted me to come outside with him.  After playing for a bit, he got onto the trampoline & I sat down - outside - to read the paper and soak in the playful quiet of mid morning.  I also cherished my thoughts of my dear friend in CA who sold us this set.

Kyralyn loves crafts.  She turns everything into a craft.

You should see her room!

She found my craft box and has claimed it as her own.

One afternoon Parker wanted to go to the library to pick up some spanish word books.

I picked up a few books with various craft activities in them.

I thought that sometimes while the boys are at practice, I would share craft time with my girl.

Sometimes it works out that way.

(most times she is finishing up her homework, eating dinner, reading together with me, or riding her bike)

But tonight...cupcakes.

She saw several different styles on a page in one of the books and chose to do these.

She got creative with her own ideas too.

 Other things too:

Dallin plays football with Eric, just like old times, when he has more than 10 minutes.

working hard in school.

volunteering with math in Parker's class weekly.

 & hopefully reading in Kyralyn's class soon.

Making bread.

writing lists.

Mowing the lawn.

Watching Burn Notice.

a regular attempt at the important.

Reading Harry Potter.

Washing, washing & washing clothes.

Parker likes to have some play time with Ty before practice.

cousin birthday parties - air soft battle & night games.

visiting family from out of town.

Heidi's viewing (and thinking of her during the funeral the next day while at football).

Gymnastics for Kyralyn.

freezing peaches from our own tree.

making apple treats from the neighbor's generous harvest.

games & awards for the Cub Scouts.

and gratefully:

running, running, running,

keep them motors running!

 

a blue balloon

On Sunday, September 2 we headed up Provo Canyon for an afternoon with water, fire, family, food and, unexpectedly, a blue balloon.

I think the name of the park we were at is 

"South Fork Park".

As is usually the case at these mountain parks on Sunday afternoon, it was crowded.

Fortunately we found a bbq pit and picnic table tucked back in a ways on the other side of the river.

It was the best spot...

Where we were, the river slowed, and since it was low there were even a few spots of land in the middle.

Kyralyn loved having Tate as her shadow as he followed her around in there

(& he was followed closely by his mom).

Parker immediately set about exploring the depths of the river

It's not quite the same as the time he came down the shore singing, "hi-ho the dairy-o, I'm goin' in the lake" and jumped in, (he was 5 afterall) but he does still love to immerse himself in mountain water.

Cool and refreshing...

In our family a soccer ball and a football accompany us on most outings.

Once dinner was packed up we headed to the green space to play.

There, Tate found a balloon to play with.

But unlike a ball, it can't come back to you if you let it go. 

"up"

i'm intrigued by my emotions whenever I see a balloon rising into the sky...

there is a keen sense of sorrow or loss 

but it is mixed with an invigorating sense of hope & power

I was enjoying so much of our evening and the people around me, that I didn't look up through the trees we were playing in.

While I was chasing Kyralyn with the soccer ball I noticed a woman taking pictures of the hillside.

It was then that I looked up, and all around.

Fall has begun.

In all its august splendor.

#2 and #3

Dallin and Parker played in their 4th football games today.

Both themselves and their teams are showing improvement and had some great things happening.

But before we get to game 4, we need to record games 2 & 3.

They are working hard, learning a few things about teamwork & respect in frustrating situations and even having a bit of fun.
